Yields: 8 servings
- 1 - 12oz Bellwether Farms Whole Milk Ricotta
- 2 Tbls. confectioners sugar
- 5oz - semi-sweet chocolate, melted
- 1 C whipped cream
- 3 Tlbs. Grand Marnier Liqueur
In a food processor, blend the ricotta, sugar and melted chocolate until smooth. Add in the Grand Marnier and pulse until combined. Transfer the mousse to a large mixing bowl and set aside. In a mixing bowl, whip the cream to a soft peak. Fold the cream with a spatula into the ricotta mixture until smooth and combined. Divide up into serving dishes. The mousse can be made a day ahead and refrigerated. Serve with a tuile or cookie for a crunchy texture.
For a nice look, serve in martini glasses.
