Makes 20 small Brownies
- 1/2 cup Butter, cut into chunks
- 6oz Unsweetened Chocolate, finely chopped
- 1 1/2 tsp. Vanilla
- 2 1/4 cup Sugar
- 5 Eggs
- 1 cup AP Flour
- 1/2 tsp Baking Powder
- 4oz Bellwether Farms Fromage Blanc
- 4oz Bellwether Farms Creme Fraîche
- 8oz Pecans, chopped (optional)
Melt the butter and chocolate in a double boiler until smooth. Remove from heat and stir in vanilla and 2 cups of sugar. Add 4 eggs, one at a time, incorporating well after each egg. Stir in flour and baking soda. Stir together until smooth.
In another bowl mix fromage blanc, creme fraîche, 1/4 cup sugar and remaining egg until smooth.
Butter and flour a 9-inch square baking dish. Spread 1/2 the chocolate mixture evenly then pour cheese mixture on top. Drop 1/4 cup portions of remaining chocolate mixture on top. Take the tip of a knife and swirl the mixture to great a nice look.
Bake brownies at 350 degrees for around 45 minutes or until a toothpick inserted into the center comes out clean. Let brownies cool then cut into squares.
