Mix in bowl:
- 1-7.5oz. Bellwether Farms Fromage Blanc or 12oz Basket Ricotta*
- 3 Tablespoons Extra Virgin Olive Oil
- 3 Tablespoons grated parmesan, romano, or dry jack cheese
- 1 Tablespoon chopped fresh herbs (chives, tarragon, or basil)
- Freshly ground Black Pepper
Core four medium-sized ripe tomatoes and fill with above mixture.
Bake uncovered for approximately 20-30 minutes at 375°.
*If you use the Ricotta you will need 5 tomatoes.
